Pumpkin Choc Chip Cookies
 
Prep Time : 20 Min  Cook Time :15 Min
 
 
Ingredients:
 
1 can pumpkin
 
1 lg egg beaten
 
1/2 cup vegetable oil
 
1 cup sugar
 
2 cups flour
 
2 tsp baking powder
 
1 tsp cinnamon
 
1/2 tsp salt
 
1 tsp baking soda
 
1 tsp milk
 
1 tsp vanilla
 
1 cup choc chips
 
1/2 cup chopped nuts (optional)
 
Pre heat oven to 350 degrees.
 
Mix can of pumpkin with the beaten egg and oil and sugar. 
 
Mix flour, baking powder,cinnamon and salt.  And this dry mixture to the pumkin mix. 
 
Dissolve the baking soda in the milk, add vanilla.
 
Add the baking soda mixture to the pumpkin. Mix well.  Add the choc chips and nuts.
 
Drop by rounded teaspoons onto a greased baking sheet. Bake for 15 min or until golden brown.
 
Let cool.

Beef Barley Soup
 
 Prep time: 30 min   Cook time: 2 hours
 
 
3/4 lb chuck roast trimmed and cut into 1/2 inch cubes
 
1 1/2 c sliced carrots
 
1 1/2 c sliced celery
 
2/3 c chopped onion
 
8 oz presliced mushrooms
 
4 c fat free beef broth
 
1 bay leaf
 
2/3 c uncooked pearl barley
 
1/2 tsp salt
 
1/2 tsp pepper
 
 
 
Heat Dutch oven to med high heat.  Coat pan with cooking spray.  Add beef - cook 4 min until browned.  Remove beef. 
 
Add carrot,celery,onions and mushrooms cook 6 min or until liquid evaporates. 
 
Add beef, broth and bay leaf.
 
Bring to boil over med-high heat.
 
Cover and reduce heat. Simmer for 1 1/2 hours. 
 
Stir in pearl barley, cover and simmer 30 min until tender.  Stir in salt + pepper.  Discard bay leaf.
